I am your customer and I give a fake ID to avoid paying you for services rendered.
You take me to small claims court to get paid.  

How does that story prove that you are wrong to secure information for payment?
Or are you saying that the right of clients to means to stiff providers is a necessary part of the sex work business model?

This happened in CANADA.   Different rules to the game up there.   Things are legal in some areas and what not.

So this is a different ball game so to speak.

Why fear giving real details up there or maybe the rule is to show ID when you walk into a place.  Dont know.

But just like you mentioned if you want to be a prick and not pay... dont give real world info.

I don't think that is the law in most places. It's like non-payments for something are seldom handled in criminal court, even though they might seem like theft.
