I offer CC payments for established and trusted friends, but only have a couple of clients that use that option. Most men still prefer paper.

Let me play devils advocate,

I can pay either way or both ways. Doesn't matter to me as credit doesn't scare me. To be honest I prefer credit and the points that go along with it if the option is there. Most girl's that I have see will take credit after the 2nd or 3rd time getting together as they have legitimate businesses and do this on the side for additional income. If your married I understand not leaving a paper trail but if you are single what is the big deal if it's a legit business? So what if the government has a record of it. She's paying her taxes what's the problem? Some people are way to dramatic on these boards.

In all honesty and not to be funny if the government is spending there hard earned money looking for me we as a country are more screwed than I thought.

And either option shouldn't be an issue. Nonetheless, the same goes for the clients as well. Some of us have been burned by counterfeits and charge-backs on cards.

as you leave, you don't know each other.  As it should be.  Just dumb to leave a paper trail.  And from her POV, cash doesn't bounce or get charge backs or other schemes to defraud you of the money you worked for.

Safety - you do not want to leave an hotel with 2000+ ( lady) as well as and gentlemen may feel uncomfortable  to care such amounts  

 
Same can be NOT only with lady , but an with gentlemen as well - and especially gentlemen going on date with not so well reviewed lady - there many murky and providers as well

Always pay cash, unless there's an incentive to pay credit. Knew a provider who would knock off $100 of the cost of a 2+ hour appointment if you prepaid electronically. If more escorts were like that, then I'd pay electronically more, but why make a 2 party transaction (me and an escort) a 4 party transaction (me, my credit card company, escort, her credit card company)?

I've had several clients do a split payment of cash and say, an AMEX gift card or two, depending on the amount. He doesn't have to worry about explaining a large withdrawal of cash and can use his credit card to buy the gift card. So he could potentially bury it in another purchase if necessary and perhaps earn CC points as well.  

VISA/AMEX/MC gift cards all spend the same.  If he just didn't want to carry a large wad of cash, he can buy some reload cards with cash. That works well for me too
