The Palace, The Peninsula, The Four Seasons and the Mandarin Oriental are all beautiful and do not require elevator key cards. None of the staff have ever bothered me. In fact one member of staff at The Four Seasons will call me from time to time if a special guest needs company.  

It's a shame because it was clearly once a beautiful hotel, but I personally find the Waldorf a bit neglected. Run down would be an exaggeration, but I don't think it compares to the other 5 Star Hotels in the city. But as the last commenter mentioned, the lobby is massive, so it's an easy place to blend in I suppose.

for hobbying in New York.  Please advise me on security checks, discrete restaurants, etc.

I've always had good experiences with the Waldorf-Astoria. Big enough to be anonymous, not paranoid about security, though that may have changed now that it's bee sold to a Chinese company.
