Pretty sure it wasn't me as I've yet to meet you :).  Pretty useless to change your number, a good stalker will find your number pretty easily because you are advertising it.  Maybe go w/just email?
I had an ex who stalked me, and it took  a LOT of time before she gave up, almost 1 year.  They are very emotionally fragile and no logic will stop them, only time.  I just played along, unless it gets physical I wouldn't not worry about it.

I know many providers who don't put their phone number in ads or in their TER profile. Then you can control who gets it... eg only vetted, trusted clients. Certainly not the jerk who's stalking you!

I would change your number and go to email only. Also you can try using a google voice number and block all calls from their number and restricted numbers.  

Another option would be to change your number and have your phone set to if the number is not in your contacts that it automatically goes to voicemail. This would require you to place everyone's number in your contacts in order for it to ring through.  

Stalkers are never fun, some go away easily others it takes time. I wish you all the best in your decision.

I have an iPhone and use the block feature. I also use Google voice for voicemail. I always know who calls and the voicemail is transcribed into a text message. The blocked numbers never ring my phone, but I do receive their messages. The transcribed text messages work very well for evidence and hard copy records in case you need it.

But if that doesn't work then I like the idea of changing your number but only handing out once you have a confirmed appointment.
