There have been cases where hobbyist and Johns got arrested without a sting operation.  There is a street prostitution sting operation that was conducted in my area. On the papers, the police officer pulled the firefighter over after the prostitute got into his car. He admitted of picking up a prostitute and charged with patronizing a prostitute.  
I read in the paper about a city councilman who booked an appointment with a BP escort. There were motel cameras that record him walking into the hotel room. The escort was later arrested and turns on him. He was charged with a class 4 felony of patronizing a prostitute. The charges were dropped because the escort cannot be located to testify against him.  
There was also an internet news article that talks about police arresting hobbyist when they walk out of the motel room. About 5 hobbyist (Johns) were arrested. They later confessed of paying for sex. They were charged with patronized a prostitute.  After the police arrested the 5 hobbyist, then they arrested the escort. The escort had an ad on BP and police was able to link the ad to the escort that got arrested.  
You can use the massage defense if you see the escort for 1 hour. But 15 minutes in and out can be difficult for the jury to buy that you purchased a massage.  
Best thing to do is to first check the hotel or motel area before walking into an escort appointment even with reputable escort. Sometimes you can catch police off guard and alert you to police spying. This is not full proof.  
Plead the 5th and get a lawyer. Never admit you pay for sex or have sex with the escort. Police don’t need a sting. They can just spy on an escort and catch hobbyist coming out of the appointment. This is rare but it can happen. The classic method is a decoy to sting the hobbyist

There are such things as 15 minute massages.  Or 20 minutes, or half hour, or 45 minutes, or 50 minutes, or 60 minutes.  

I hardly see why a jury won't believe that a massage couldn't have lasted only 15 minutes as you claim.  You can find ads from any legitimate massage place showing how 15 minute massages are readily available for $20 or $30, often times a discount is available with a coupon to top it off.

Your best defense if you are arrested is NOT TO SAY ANYTHING to the police.  Not innocent comments about how you saw her ad, not comments about how you were only there for a massage, in fact, say nothing.  If you lie and say you were only there for a massage they will only catch you in a lie, and use that against you.  Any statements you make can only be used against you, they will never be used by the police to prove your innocence.  Save your statements about what happened for your own lawyer who you will be speaking to at a later time.

If you really want an education on all the ways you can get screwed if you say anything at all, just watch the video below.  It is a former criminal defense attorney who is giving this lecture, he gives examples of how even the most innocent and seemingly mundane comments that you say to the police can be used against you.  In other words, the police play dirty and he explains how they do it.

This entertaining, fact-and-reason-filled video is worth watching by anyone who may ever conceivably come into contact with law enforcement.

I have heard of a few cases (where the reports could be verified) where the neighbors called the cops.  
Guy getting a BJ in a vehicle...  he ADMITTED (confessed) and was charged.  Cops did not need to witness since he was convicted by his own statements.

Neighbor Soccer Mom with a lot of brief period gentleman callers at her home...  while kids were art school...   neighbor dropped the dime on her.  (I wonder if neighbor's husband had been there.)   When confronted, she admitted (confessed) and was charged.  

If departing Johns confess they can indeed be charged.  STFU.
