That is pretty much up to you, your desires, your stamina, your ability to recover, etc. If you have expectations for MSOG you need to make sure you schedule enough time for you and make sure it is something that the provider is willing to do. It is generally covered in many reviews. In any case respect your agreed upon time unless you and the provider discuss it and arrange otherwise.
As a newbie, I contacted a provider and asked to reserve a couple of hours. I prepared the gift for a 2 hour session. We spent at least an hour talking on the couch, before she made the first clear indication that we ready to escalate. I was completely satisfied with the session. BUT for a 2 hour session how much time should I expect with chit-chat and how much with partying.

the time for chit-chat will vary by provider, you, and all sorts of other factors... this is where doing homework on TER comes in... most reviewers will comment on this in their recaps... read the reviews carefully and decide if she is for you. One or two hours scheduled is totally up to you... I tend to schedule two hour sessions or more with providers I am comfortable with...
Communication here is key... let her know... any good provider will listen... there are days when I am somewhat more randy than normal, so I see one of my regulars... at this point, they know and I do not even have to say a word...
I've seen providers that will let you chat through your session, making me rush to climax.
I've also seen providers tha will wait for you to make the move, before she does.
Since you paid for 2 hours, 2 rounds is not an unreasonable expectation. Once the donation is given, and she asks what do you want, SAY 2 ROUNDS.
In answer to your last question, the asnwer is mixed. I'm ususally good for 2 rounds in an hourk with proper inspiration. Being a newbie, I assume that value-for-money is important to you. You have no idea whether or not a new provider will satisfy you,
