Travel time is estimated at about four hours on either route, but if we have to stop every 30 minutes for her to pee, (yes, most of what I "know" may be from sit-com's) it will take a lot longer. There are very few rest stops along that coastline which include facilities, so that will be a consideration. I already had planned several scenic vista stops along the way, but will I need a lot of other stops?

Especially in such a hilly area. I she's anything like I was, sitting just became her new best friend. No hikes (unless flat and keep it under 1/2 mile round trip), keep things short and provide a lot of opportunities for rest.
