1st) You can get a good idea who will be available by seeing who's appearing and checking around to see if they provide.
2nd) In the past, I've found that Adonia with TLC has the most ladies to choose from.
3rd) You have to remember that providing is the last concern that these ladies have. They have to be a certain booths for long periods of time and have after parties they must attend. Thus, they have only a few slots (usually before the shows begin and right after they end) to provide.

As others have said, the girls are there for the convention. They don't always have the time to do things other than be at the booth. Remember, studios pay the girls to be there. Sometimes, the girls actually have shoots scheduled at the same time. That being said, a lot of them do privates on Saturday, and then go to the show after 4pm. Just remember, the girls take HOURS to get ready to make their appearance at the show so don't expect her to see you at 2pm if she has to be at the show at 4pm.
Also, as others have said, check with agencies and see what they can do for you, and do it NOW. The sooner you book, the more likely the girl will be able to fit you into her schedule. Adonia at TLC is an excellent choice because she keeps good track of the girls (I know she usually goes to the Edison Exxotica) and will make sure the girl shows up. If something does come up, Adonia is usually good at making it right.
Your best bet, however, is to try and make arrangements through Adonia (or another agency if you prefer) to see the girl BEFORE the show or AFTER the show. That way, the girl can adjust her flight dates to make your date happen, and she won't be busy with the show at the same time. She'll also be well rested and well fed. That is, if your date is for Thursday evening or Sunday evening, you're likely to have a better time.
Take if from a guy who had a date during the convention with a porn star: she was at the show all day (from about 10am to 8pm) without a break, or food. When she got to the hotel room, she was tired, and hungry and couldn't wait to get me off and get out to get something to eat before going into NYC to one of the after parties that she was scheduled to appear at. It was not one of my better dates.
Oh, one other thing: sometimes Adonia (and other agencies) book the same girls in NYC the week or two before the expo doing private dates. You might want to keep an eye out for ads, and book your date during that week, rather than doing it during the expo
Wise words from someone who's obviously been to a rodeo or two in his day. I've had the pleasure of actually sharing a booth with a pretty well known PS at three shows over the years (AVN once, Adultcon/LA x 2) and will vouch for the hours the girls can put in, particularly the peak days of the show. At all of these shows, I had more than a date, I was there WITH her and we didn't get to play once. I've developed a new understanding for these girls, especially the demands are put on them by their fans. If the girl is doing it right, she has to be "on" for anywhere from 6 to 12 hours. It's quite a drain. I also have a better understanding of the need for a personal assistant, someone like that can prove to invaluable.
We are actually going to be at the Edison show and I am really looking forward to it since this will the first show where I'm running the booth so all I'll have to worry about is my companion, whose needs I am quite used to catering to. Not that having those booths wasn't a blast and I'm certainly not complaining, it's just that if you do have one, someone has to be an adult and that role invariably fell to me. That meant I was the first one there in the morning, the last one to leave and was there most of the rest of the time so I too was pretty spent at the end of the day. Now, I did sneak away on separate occasions to hook up quickly with Georgia Peach, Chennin Blanc and Chennin's friend Queeny at AVN, the Athena Pleasures at Adultcon so it can happen but it's easier if you're there as part of the show.
In addition to the excellent suggestions above, I would also shoot for the first day or the day before the show, when everyone's energy is peaking. If you're going try to do something the day before, I'd suggest getting on that now since people's travel plans may already be set. I know we've had our plane tickets for a month now. A girl may be willing to change her plans but the sooner you set it up, the less it will cost someone to change their itinerary, making it easier for them to say yes. Good luck!

And I just wanted to say that Mr. French is indeed making a very important, helpful and altruistic point here, and that is that your best bet is to PRE-BOOK with the lovely lady of your choice; otherwise, just like Mr. French articulated, you're going to be battling with last minute cramming (no pun intended). And if you do catch a lady with a "spare window" of available during the convention at the last minute, she's probably going to be exasperated at best.
