I like CUT at palazzo 
But there are several other great options too

Anthony's steak house is amazing and has great service.
Give it a try , south strip away from all the hustle and bustle of the strip.
Great steak, very well seasoned. And they have a wild mushroom side dish that's probably one of the best things I've ever had in my life. And I'm kinda meh on mushrooms.
Will be out there at the end of next month. Looking forward to a repeat visit for sure!!
Jean Georges-Aria and also his first location at Bellagio both are fabulous food and service.
The steakhouse at the M hotel I tried not too long ago and the food was fantastic.
Lavo-Palazzo while it is a italian restaurant they do have steaks there which were very good!
Craftsteak at MGM-did the tasting menu a different experience great food and service.
Carne Vino at Palazzo dried age steaks the meat tends to be more pink than usual steakhouse they say due to the dry aging process.

Old school steakhouse from waaaay back in the day Golden Steer right off the strip on sahara not far from SLS hotel.

There is a Capital Grill on the second level of the Fashion Mall that faces The Wynn and the side street. They carry prime cut steaks and there is also one in Atlanta. I tried Capital Grill on my last Vegas trip and it's food and service is very good.

There are many outstanding steakhouses in LV, but my current favorite is the Silverado Steakhouse at South Point. Had a great meal there last month... filet + lobster was perfect, as were the creamy mashed potatoes, along with other perfectly prepared veggies. The chef there was at the top of his game.
It's an easy location to get to, as it is just off the self park elevator on the main casino floor. Got there about 20 minutes before closing, and were welcomed and treated well... great service, and had the place to ourselves. And the best part was the smooth jazz playing in the background. Thankfully, a place that doesn't play the Rat-Pack nonsense... I swear that I won't ever go back to Vic & anthony's until they change their music... Ugh, and they play it so damn loud, too. Sorry for the rant. LOL
the steak house at circus circus...i know, i made that face to until i went...and yes i have been to so many on and off the strip and downtown...del frisco would come in a close second and the old homestead in caesar's would be my third
