Honestly, take your time and enjoy relating to us.  It is out time you are considering, not the particular services/menus/ possibilities that happen or may not happen between two adults who are consensually exploring further.

Even after you're screened and even though it's on the menu, my experience is, until they actually see what you're packing you won't know if you'll be cruising the Greek Isles. Size is always the issue.  
 

...if Greek is going to be possible. There are providers that don't mind talking specifics after you have passed their screening. There are providers that won't discuss anything at anytime other than in the room face to face. (Some of them won't until things have moved along a bit and they are sure about your intentions and bona fides.) Some won't discuss things until they have seen you at least twice. Problem is in a situation where you both are new to each other you don't know if she is OK with a discussion or not. If she isn't OK with it and you ask then she cuts off communication. Now your sol (shit outaluck).

All you can do is read her reviews carefully. PM reviewers that mention doing Greek with her in their review and ask what she may have done or said (if anything) about size. Then schedule with her and see how it goes. Find several (it'll take time) and keep seeing them to get what you want. Sometimes too they may have provider friends they can recommend who are OK with bigger guys doing Greek and can refer you and give a reference. Finding what you looking for often takes time but it's worth it.

Bring a little extra.  Most ladies enjoy something additional to the regular consideration for her time.
