that since I know her/seen her already, and the payment wasn't an issue, would I be safe holding back the payment till the appointment was over?  I mean they can't grab you after it is all done can they?  I would think they would want some discussion of what I expected and then an exchange of compensation before anything happened.  Any comments?  I liked the girl.

Seen a girl, had a nice time then a week later she was arrested and listed in the paper.  How safe is it to see her again?  Do police ever force girls into operating a sting or working with them to get their clients?

....it's not uncommon for cops to TRY to flip clients or providers but that doesn't mean most of the time it's successful.  If you've had a long enough/good enough client-provider relationship I'd wait a while like at least 6 months before attempting ANY contact.

What everyone says makes sense.  I've seen her once and felt pretty at ease.  She emailed me after it happened and explained the situation but something in me wonders if that was the cops just trying to bait in some of her clients.  She advertises but not as often and not in the town she was busted in.  I'm reluctant but I know she could probably use some repeats.  decisions, decisions...

I quickly shift to compensation after.  I doubt that LE would allow her to provide services to try to bust you after.   The real danger is that her ID is now know to LE...  & they might be watching for her.  Yes, she's avoiding the jurisdiction she was busted in.  But surrounding areas might or might not be watching for her.   Small PD who don't have dedicated vice squads, have periodic crackdowns & in between are relatively safe.  
Has she changed her operation to keep a lower profile?  Does she change location frequently?  Is she using best practices for screening & the admitting of clients?   I think it's a legit question...  not just business as usual one town over.
