You can get hit by a bus any time you cross a street also, but by taking precautions you lower the odds significantly.

In the case of providers, seeing only well reviewed ones is the single greatest way to lower those odds to the near infinitesimal.  

If you are really concerned, getting an outcall and having her come to you further reduces the odds of a bust as LE is loathe to go and bust on someone else's turf.

If you go to an incall, be sure it is at a good hotel and not the cheap ones where the room doors face out into the parking lot.  LE (cops) love those set ups so that they can see what's coming.

I visit nyc frequently and done plenty of out calls as well as incalls.  

Never had a problem other than nyc generally being higher priced than other areas. Some girls seem to do some sort of time share for the incalls where they share the place with other girls. Those still make me a bit uncomfortable since I'm used to having sessions in a decent hotel. It almost feels like one of her friends could just walk right in...  
Knock on wood,  haven't had another dude walk in on me although I did have a girl hanging around in the other room. not to mention occasional barking dogs.   No LE incidents though.  

Stick to girls who have like a dozen+ reviews from well known guys in order to play it safest. Any girl can become flipped and work with LE when she gets busted but a well reviewed girl who takes screening seriously will likely be ok to see.

No matter what, well reviewed with a record of reliability is the way to go.  There are many NY incall places, some being brothel-like in ambiance, some more massage parlor / spa (AMP, KMP, RMP, ...).  Indies will often use hotels but some have apartments.  I think the odds are low, but if you're uncomfortable approaching this (your first situation?), bite the bullet, move on and arrange for something another day.  

(Be prepared to pay a penalty for a late cancellation at a future meeting with the Indies.)

Are pretty safe. The only way you would get busted, is if the lady got busted and the police used her to bust some johns. Not many ladies would actually agree to this, so your pretty safe with well reviewed ladies
